  8. Scaled, gutted and the stomach black lining removed. Make 2 slits each side. Rub the whole fish and its cavity with lemon juice and leave it for 15 minutes. Rub the whole fish with a mixture of same amount of salt, pepper, ground coriander and garlic powder. Put some julienne ginger and shallot in the cavity. In a pan put a tablespoon of margarine (or butter), 2 teaspoons of lemongrass powder, 2 teaspoons of coriander powder and fry them for 1 minute, then add 2 tablespoons of sweet soy sauce and mix them well as a wash. Brush the fish with sweet soy sauce wash and grill it for 10 minutes each side. To make the sauce, in a bowl, mix chopped chili, sliced shallot , lemon juice and sweet soy sauce. Arrived at the spot around 6.00am but no one fishing at the spot, while according to lunar calendar fish activity would be high from 6.01am to 7.01am and the high tide would be at 8.15am The water was greenish and some washes every now and then. Using white bread as bait first cast got first Luderick in 30 second. Followed by other 2 Luderick and 1 Trevally in one and half hour fishing. Thanks for reading. Andy
  10. Curried fish is nice as Greyfox says. I think any fish with firm meat is good for curry, e.g Leather Jacket, but for fish with rather soft meat still can be used for curry if we fry it first, otherwise it will get broken and messy. Andy
  11. Yes, and the other day I saw 3 guys fishing down close to the water at the right side of the spot I use to fish, hauling two 10L buckets full of fish.
  12. Thanks Andrea. I always spend 2 or 3 hours fishing only. That's enough for me to enjoy fishing while doing exercise and getting vitamin D from the sun.
  13. Coat the fillet with a mixture of plain flour, rice flour, garlic powder, smoked paprika, salt and pepper. Pan-fried it batch by batch. 2 green chili, 1 red chili, onion, garlic and shallot chopped. Hot 2-table spoons of oil in a pan to sauté all the ingredients. Put galangal, bay leaves, salt and pepper and sauté for another 2 minutes. Pour over the fried fillet and done.
  14. Went fishing at South Coogee after a week absent due to the bad weather. Arrived at the spot around 7am I found no one fishing, as if I owned a private cliff today, not bad Like the picture says from 7am to 9am I got 5 Blackfish on white bread. I made fried blackfish fillet with green chili sauté as seen on Kitchen section. Thanks for reading. Andy

  16. Here is another grilled Black Drummer with a bit different style. After cleaning the fish (scaled, gilled, gutted and black lining removed), I made several slits both sides and brushed lemon juice to the whole fish and its stomach cavity. Put in a bowl 1 tablespoon of salt, 1 tablespoon of black pepper, 2 tablespoons of coriander powder and 2 tablespoons of chopped garlic. It is for 2kg size fish. Mix them and then add 2 tablespoons of frying oil or Margarine. Mix them well. Rub this mixture to the fish cavity and the whole fish especially the slits. Fill the fish stomach cavity with some grated ginger, coriander leaves and lemon rind. Grill the fish on high heat for 20 minutes each side. When cooked, put it on a plate and garnish it with coriander leaves and shredded chilli. The sauce is made of sweet soya sauce, chopped bird eye chilli and shredded shallot with a squeeze of lime.   17. Hi Luke,You can do the same thing with chilli and garlic, and then brush it to the whole fish especially on the slit. Originally they use coconut oil for it, it tastes better. I didn’t do it, as my grandson doesn’t like the taste of chilli. Andy
  18. Hi Raiders, Thought I would share with you this grilled Black Drummers with Indonesian recipe. After scaling, gutting and removing the black lining I made some scores on both sides. Put some lemon juice over the whole fish and its cavity. Bring some grated ginger and lemongrass to boil on 100 ml cooking oil and brush it to both sides of the fish. Put some grated ginger, coriander and shredded green shallot into the fish cavity. Put salt and pepper over the whole fish and its cavity. Grill the fish on high heat charcoal griller for 12 minutes each side, actually it depends on how big the fish are. When it is cooked place the fish in the plate and put some coriander and shredded chili as garnish. You can enjoy it with sambal bajak that you can get it from Asian grocery or make it from scratch.   20. Why don’t you try white bread as bait? It is very versatile bait, as I got Blackfish, Black Drummer, Bream, Trevally, Black Trevally and Tailor on white bread. It is very cheap only 85 cents from Supermarket. Your hand won’t get smelly and whenever you are hungry you can have it. Andy
  21. Thanks Frank, but it looked too easy yesterday afternoon as within one and half hour I got 5 hooks up but the last 3 got snapped leader which might have been of bigger size ones. Cheers, Andy
  22. Hi Raiders, It has been quite a long time since my last post despite reading this favorite website almost everyday. This afternoon I went to my favorite spot in Eastern Suburb targeting Black Drummer. There were 3 couples of Japanese fisho when I arrived at 2.10pm; today high tide was 5pm. They were targeting Blackfish and Trevally on white bread, as after the storm a lot of big Trevally got caught at the spot, I got 11 Trevally on bread 2 days ago. This afternoon I got 2 Black Drummers (46 and 44cm) on squid and other 3 hook up but got snapped on leader. It was unforgettable moment to me, as usual the pigs were fighting fiercely. Cheers, Andy
