Never seen them jump out of the water, but have had them take a jig skimmed over the top of the water.
What is special, and esp this time of the year when the big fellas are paired up for breeding, is when you hook one, and its partner follows it in to the boat, if your real lucky, you can get a double hook up. It does happen, although i've only done it once, and been close a couple of other times.
Those other times, i've caught the partner almost instantly as the jig hits the water again.
