daleyboy Posted June 22, 2008 Share Posted June 22, 2008 Just tried a new batter recipe and it was that good i hafta pass it on .. dont have exact measurements as i never measure anything INGREDIENTS: Flour Salt & Pepper Grated rind of 1 lemon 6 Garlic scapes/shoots finely chopped Fresh coriander finely chopped Beer of choice Mix together adding enuf to beer to make a nice even mix (make it slightly thicker than you would for normal batter so it holds the coriander and scapes in it) and let sit in the fridge for 30 mins take out of fridge and add a small amount of water and mix again and its ready For the fish, cut in to chunks (kingfish was used this time) and sit in fridge for at least an hour then coat with flour before battering.
