Love BBQ'd fish and the best and tasties way i have found is to; - Chop garlic, parsley and mix in a bowl with olive oil, salt & pepper. Salt the fish, be generous with the salt. Spread this mixture over the fish and let it rest for a good couple of hours... IMPORTANT - Mare sure the fish is room temperature prior to cooking... Cook on a medium heat and keep on pouring the mixer over the fish while cooking... BEST results on a charcoal BBQ..... Joco Posted September 17, 2009 Author Share Posted September 17, 2009 (edited) Hey fellas, i totally forgot i posted up this thread.... @Goony, the other day i threw a Snapper on the BBQ, and like you i hogged the snapper to myself The big fella is a silver drummer.... Some dislike eating this fish, BUT i dont mind.... The smaller ones are bass/ep, still dont know the difference.... Cooking FLATHEAD using this method is AMAZING... Cooking any fish this way will work.... ACTUALLY Ozzy Salmon i have tried once and NEVER again, texture was a bit funny, like eating rubber.... GENERAL RULE with BBQ fish, just make sure you consume it immediately as many of you know, once the fish cools down it become a bit tough/chewy.... I left out a BIG SECRET with this RECEPIE.... With the garlic, parsley, olive oil, salt & pepper mixture... Make sure you BUY and add a generous load of VEGETA... Greg Im pretty sure its a BASS, but the taste was EXCELLENT... My favourite fish to eat over a charcoal BBQ.... The flesh is fatty and once cooked whole on the BBQ it stays moist and the meat falls of the bone.... YUMM Many river fish such as Yellow Belly, Red Fin, Perch, Bass, EP etc are fatty fish and once thrown on the charcoal BBQ (whole) they taste so delicious and buttery....
