Asian Trevally Dumplings

there is no offical recipe i made it up , i use to be a chef so everything was off my head

2.5kg trev fillet no bones, blood meat taken off (9 trevs meat )

half a bunch of green shallots diced

2 handful of plain flour

salt and pepper , now rule is 100g for every 10kg

table spoon chinese booking wine

2 tbsp oyster sauce

3 tpbs soy sauce

1tpbs maggie seasoning

1egg

dice about half the VOLUME of the fish - onions so for me it was about 4 large onions

5 gloves garlic minced (blender)

same amount of ginger minced

cook the onion with garlic and ginger

allow to cool down

mix with the above seasoning and fish

now you can use half fish half chicken

or you can add prawns or corn (my wifes favourite)

put into those dumpling skin which u buy from asian shops

not wonton skins the thicker circle ones
