Help with Smoked Kingfish

Hi

im keen on smoking up a few kinfish i scored over the weekend

as ive never smoked a fish before im after a little run down on how i do it

i have the smoker,woodchips and king fillets at home just after a little run down on what i do next

put the fillets in some water with plenty of salt in it (you can add different spices and stuff its up to you) let is soak for at least an hour then take the fish out and completely dry out with a paper towel or tea towel. Spread the chips evenly and thinly and light the burner, chuck your fish on the rack and shut the lid and come back 15 min later and it should be right. Then its up to you what you do with it

mate it wasn't far off

a little bit dryer due to the hot smoking but the taste was the same

ive cooked up about 5-6kg of the stuff in the last few days and it goes down a treat

all i did was get 1/2 cup of salt and 1 cup of brown sugar and mix it all together then just rub it all over the fillets and then put them in the fridge for 2-3hrs

then just smoke them for 20min and your done
