finin
Gday all, just wondering how everyone likes to cook their leatherjackets. Have a heap here and would like to try a few different recipes. So if you can help out it would be much appreciated.

finin
Twitchie, thanks for your thoughts . As you said simple cooking. Usually do all my fish simple anyway so thats what i did. Just butter in the pan... pan hot... put fish in skin side up... cook... eat... to easy. Nice too. Also did them as a rawfish... 2 tins coconut cream... 1 chopped tomato...1 chopped cucumber... juice of 2 limes, 2 lemons... salt and pepper to taste... whack it in the fridge eat in a couple of hours better after 24 with reef jacket as meat is firmer.
