Yowie Posted August 17, 2013 Share Posted August 17, 2013 This is from a recipe from the Sydney Fishmarkets - had it for years but only just found it again so tried it for the first time. Ingredients: part 1 - 2 tablespoons of oil of your choice - 200 grams of snowpeas, topped and tailed - 2 garlic cloves, finely chopped - 1 piece of ginger, peeled and finely sliced - 8 shallots, cut into 3cm pieces part 2 - 1 kilo of squid, or about 600 grams of cleaned tubes (the 2 long tentacles can also be used, the other 8 tentacles on medium to large squid are too chewy for this recipe) cut tubes into rings: or cut the tubes lengthways in half, then make shallow diagonal cuts on the inside and cut those tubes into strips about 1cm wide part 3 - 1 cup of chicken stock, or add 1 chicken stock cube to 1 cup of hot water - 2 tablespoons of oyster sauce - 1 teaspoon of sesame oil - 3 teaspoons of cornflower mixed with 1 tablespoon of warm water Cooking: Add oil from part 1 to a frying pan, bring to medium heat, and stir fry the remaining ingredients from part 1 for 2 minutes. Add ingredients from part 2 to the frying pan and continue stir frying for a further 2 minutes. Add the ingredients from part 3 to the frying pan and continue cooking for another 1 minute.
