Here is another grilled Black Drummer with a bit different style.

After cleaning the fish (scaled, gilled, gutted and black lining removed), I made several slits both sides and brushed lemon juice to the whole fish and its stomach cavity.

Put in a bowl 1 tablespoon of salt, 1 tablespoon of black pepper, 2 tablespoons of coriander powder and 2 tablespoons of chopped garlic. It is for 2kg size fish. Mix them and then add 2 tablespoons of frying oil or Margarine. Mix them well.

Rub this mixture to the fish cavity and the whole fish especially the slits.

Fill the fish stomach cavity with some grated ginger, coriander leaves and lemon rind.

Grill the fish on high heat for 20 minutes each side.

When cooked, put it on a plate and garnish it with coriander leaves and shredded chilli.

The sauce is made of sweet soya sauce, chopped bird eye chilli and shredded shallot with a squeeze of lime.
